We enlisted the expert skills of chef Martin Wishart for our summertime Facebook Live and Cooking masterclass, where he demonstrated how to make a refreshing orange jelly with cardamom and mint-infused summer fruits.

Being able to watch a Michelin-starred chef at work is a fascinating insight into how seemingly simple dishes can become gastronomic masterpieces. This year, in association with our healthy cookery partner Vitality, we’re able to give you a front row seat at an online cook school featuring the UK’s most prominent chefs. You’ll be able to ask questions, learn how to cook a simple, healthy (and very tasty) dish and pick up a few new techniques along the way. Our summer Live and Cooking demonstration was with Scottish chef Martin Wishart (if you want to see how our first masterclass with Chantelle Nicholson went, click here).

Martin is a master of classical French cuisine and uses those techniques to give Scottish produce the respect it deserves across his four restaurants, two of which hold a Michelin star. He showed us how to make a delicious summer dessert full of bright, fresh, zingy flavours that was presented in a beautiful, simple way which oozed style. What was great about it was that instead of throwing in bags of sugar – something which many desserts rely on – Martin used heady herbs and aromatic spices. This made his dish more flavourful than others whilst being healthier at the same time.
