How to roast asparagus

Roasting asparagus makes a simple side dish, perfect for serving straight from the oven. You should always roast asparagus in a hot oven, and make sure that you don’t overcrowd the roasting dish as this will cause some of the asparagus to steam and cook unevenly.

Method

Preheat the oven to 200°C/gas mark 6

Wash and prepare the asparagus

Toss the asparagus in olive oil and salt then spread out evenly in a roasting dish, making sure the spears have plenty of room

Place in the oven for 8-10 minutes or until tender. Serve immediately

Variations

Nathan Outlaw parboils the asparagus before roasting for 1 minute, refreshing in ice water before roasting to help retain the colour.
