2kg beef short rib

1 onion, finely chopped
1 leek, roughly chopped
7 garlic cloves, finely chopped
1 tin of black beans, drained
3 limes, quartered

70ml of soy sauce
70ml of ketchup
130g of brown sugar
2 1/2 tbsp of salt
300ml of chicken stock, good quality
sesame seeds, a mixture of black and white
Spices & Dried Herbs
1 tbsp of cayenne pepper
3 star anise
4 dried chipotle chillies
Delicatessen
5 dried porcini mushrooms
Alcohol
440ml of porter, or other dark beer
Oils & Vinegars
2 tbsp of oil, or lard
Salad & Fresh Herbs
1 sprig of marjoram
1 bunch of coriander
