Simple steak teriyaki and miso aubergine bento box

Ingredients
Fruit & Vegetables
3/4 cucumber
1 aubergine, cut into 1cm slices
4 spring onions, finely sliced
2 radishes, finely sliced
1/2 red onion, finely sliced
Oils & Vinegars
24ml of rice vinegar
4 tsp groundnut oil
Store Cupboard
1 tsp caster sugar
1 1/2 pinches of salt
1 1/2 tbsp of miso paste
1 tbsp of toasted sesame seeds
150g of Japanese short grain rice
1 1/2 tsp sugar
3 tbsp of soy sauce
1 tsp cornflour
black pepper
Spices & Dried Herbs
1/2 tsp ginger, finely grated
Beverages
9 tbsp of mirin
1 tbsp of sake
180ml of water, cold
iced water
Salad & Fresh Herbs
3 knobs of fresh ginger, about 2cm, grated
1 handful of coriander, chopped
little gem lettuce, 4 leaves
1 tbsp of chopped coriander
Frozen
100g of frozen peas
Fresh Meat
100g of beef fillet, cut into thin slices
