100g of unsalted butter, softened

340g of caster sugar
300g of cocoa butter, for dipping
95g of plain flour
20g of potato starch
35g of icing sugar
1 pinch of sea salt
12g of gelatine leaves, softened in cold water and then drained
8.5g of milk powder
1 tbsp of sugar, infused with lemon and lime zest (optional)
Fruit & Vegetables
3 3/4 lemons, juiced and finely zested
313g of lemon juice, hot
3 pink grapefruit, from Florida when in season, juiced
