Ingredients

1 courgette, large, coarsely grated
1 lemon, juiced
1/2 red chilli, deseeded and finely chopped
1 onion, finely chopped
4 Granny Smith apples, peeled, cored and cut into 0.5cm dice
5 plum tomatoes, roughly cut into 0.5cm dice
4 garlic cloves, crushed
Cheese
40g of Grana Padano, finely grated, plus extra shavings to garnish

50g of plain flour
sea salt
white pepper
7 tbsp of clear honey
Spices & Dried Herbs
2g of smoked paprika
1 tsp fennel seeds
1 tsp mixed spice
Dairy
2 eggs, beaten
Oils & Vinegars
2 tbsp of rapeseed oil, for frying
100ml of olive oil
120ml of white wine vinegar
Beverages
100ml of water
Salad & Fresh Herbs
1 bay leaf
