This beautifully floral honey is ready in minutes and a great way of celebrating the elderflower season. Try it spread on toast, drizzled over summer fruits or as a fancy edition to a cheeseboard.

Clean the elderflower head of any bugs and dead leaves

Submerge the elderflower in the honey. You can use the jar the honey comes in, but if you're using one of your own ensure it's sterilised before using. The flavour will transfer to the honey almost instantly, but gets a little stronger over time. If you prefer a milder flavour you can remove the sprig, but it's fine to keep it in there as you use it. The honey should keep indefinitely, but may crystallise over time (depending on the variety)
