This easy vinegar recipe is a wonderful way to preserve this abundant spring flower, which tends to appear from mid-May to the end of June. Make up a large batch and it can be used year-round until the next season arrives. The vinegar is great for pickling vegetables, whisking into salad dressings, or even add a dash to your next gin and tonic for a tart finish.

Inspect the elderflowers for any bugs, dead flowers or spider webs and remove

Place in a sterilised jar and cover with vinegar. Leave in a cool dark place to infuse for 2 weeks

Strain through muslin cloth and bottle the vinegar (or return to the cleaned jar). It will last indefinitely
