Elderflower vinegar

Makes a 500ml jar

Ingredients
3 sprigs of fresh elderflower
500ml of white wine vinegar
Method

Inspect the elderflowers for any bugs, dead flowers or spider webs and remove

Place in a sterilised jar and cover with vinegar. Leave in a cool dark place to infuse for 2 weeks

Strain through muslin cloth and bottle the vinegar (or return to the cleaned jar). It will last indefinitely
