Ingredients

Feta yoghurt dip with garlic and fresh herbs

  • 1 garlic clove, peeled
  • 170g of Greek yoghurt
  • 2 tbsp of mayonnaise
  • 1/4 tsp finely ground black pepper
  • 100g of feta
  • 1 tbsp of dill, fresh (plus a few small leaves set aside to garnish)
  • 1 tbsp of mint, fresh (plus a few small leaves set aside to garnish)

Method

Place all the ingredients into the Vitamix 1.2l container in the order listed and secure the lid

Select Variable 1, switch the machine to Start and slowly increase the speed to Variable 5

Blend for 20–30 seconds, using the tamper to press the ingredients into the blades. The dip should turn pale green and should still have a little texture

Garnish with some more fresh herbs and serve with crudités, or as a side to grilled meats and vegetables. Cover and chill if preparing in advance
