Frozen peach and rosemary margarita

Ingredients

Peach and rosemary margarita

  • 2 peaches, stoned and peeled (or nectarines)
  • 2 sprigs of rosemary
  • 100ml of tequila
  • 90ml of water
  • 130g of ice cubes

To garnish

  • 1 peach, finely sliced

Method

To begin, break the tips off of the rosemary sprigs and set aside for garnish. Pick 6 leaves from the woody stems and place in the Vitamix container

Add the remaining ingredients in the order listed and secure the lid

Select Variable 1, switch the machine to Start and slowly increase the speed to Variable 10. Blend for 30–40 seconds until a smooth consistency is achieved

Divide between frozen margarita glasses and garnish with the reserved rosemary sprigs and a slice of fresh peach
