Ingredients

Waffles

  • 150g of plain flour
  • 2 tsp baking powder
  • 3 tbsp of caster sugar
  • 1 pinch of salt
  • 2 tbsp of peanut butter, smooth
  • 50g of butter, melted
  • 2 eggs
  • 200ml of whole milk

To serve

  • peanut butter, smooth or crunchy
  • 2 bananas, sliced
  • 1 handful of peanuts, unsalted and toasted
  • honey, for drizzling

Method

Place the flour, baking powder, salt and salt in a bowl and stir to combine

Place the peanut butter in a separate bowl with the melted butter and whisk to combine, then beat in the eggs and add the milk

Slowly whisk the wet mixture into the dry to form a smooth batter

Preheat a waffle iron up to temperature, then ladle in the batter and close the lid. Cook until golden and crisp – the time will depend on your particular waffle maker, but should be around 5 minutes

Top with more peanut butter, sliced banana, toasted peanuts and a drizzle of honey
