Slow cooker ratatouille

Ingredients

  • 1 aubergine
  • 1 red onion
  • 1 red pepper
  • 1 green pepper
  • 4 button mushrooms
  • 1 tbsp of tomato purée
  • salt
  • black pepper
  • 4 tbsp of basil

Method

Prepare the vegetables and cut them all into a 1cm dice. Add to the slow cooker with the purée, salt and pepper

Mix well until the purée is evenly distributed and cook on high for 3.5 hours

When ready to serve, chop the basil and stir it through the ratatouille
