Ingredients

  • 25g of pine nuts
  • 20g of Parmesan, or vegetarian hard cheese, grated
  • 1/2 garlic clove, crushed
  • 30g of sorrel, stalks removed
  • 20g of basil
  • 100ml of olive oil
  • lemon juice, to taste
  • salt
  • pepper

Method

Place the nuts, cheese, garlic, herbs and olive oil in a blender and blitz until you have a course pesto

Taste and season with salt, pepper and lemon juice
