Strawberries, mangoes and cream

Ingredients

Mango and strawberries

  • 1 mango, preferably Pakistani honey, large, peeled and diced
  • 1 punnet of strawberries, small, hulled and cut into slices

Cream topping

  • 250ml of double cream, thick
  • 1 pinch of saffron, large, soaked in 1 tsp of hot water for up to 30 minutes
  • 1 tbsp of pistachio nuts, crushed
  • 1/2 tsp vanilla extract
  • 2 tbsp of icing sugar

Method

Make the cream topping by combine all the ingredients above (except pistachios) and set aside in fridge

Chop fruit to desired size. To serve top the fruit with the saffron cream and sprinkle with crushed pistachios
