Vegan spiced rice pudding

Ingredients

  • 100g of pudding rice
  • 600ml of soya milk, sweetened, or other dairy-free alternative
  • 60g of caster sugar
  • 1/2 tsp vanilla extract
  • 1 pinch of ground cinnamon
  • 1 pinch of ground ginger
  • cinnamon stick, grated (optional)

Method

Place the rice in a heavy based pan, then add all the other ingredients, except for the fresh cinnamon. Cook gently for an hour, stirring regularly. Add more soya milk, if required

Once the rice is soft, serve topped with freshly grated cinnamon
