50g of white chocolate
5 gelatine leaves, soaked in iced water
750g of sugar
1 Earl Grey tea bag
100g of dried apricots
icing sugar, for dusting

1.2l milk
300ml of cream, lightly whipped

1 orange, zest only
100g of Agen prunes
2 Williams pears, peeled and cored
